My No-milk Savory Vegetable Porridge of Semolina


The name says it all! Well, almost all. Since I can't sleep due to the "Watchman"'s placing his loud radio just beneath my room for almost the entire night, I feel hungry early morning. I prepare something really quick. To prepare this I manually shredded some onion a tiny green chilli, a small potato, a little carrot and some beetroot and a small tomato. I heated the oil and added the potato, beetroot and carrot and only after sautéeing these for 2/3 minutes I added the onion and the chili. So far I kept the heat at 800 on my induction cooker. Now I reduced it to 600, added salt and pepper, stirred to mix, waited a little and added the tomato, stirred and mixed and reduced the heat to 300 and covered. I let the vegetables cook thoroughly. In the meantime, I crushed some roasted peanuts and kept that to one side. I removed the lid and started adding semolina and kept on stirring. Then added the peanuts and stirred. Added water and kept on stirring. Now I again increased the temperature to 600. After adding the water, the colour of the beetroot starts coming out. The semolina gets cooked very quickly.
